In the past, I had professionals who didn't do the pipes immediately and it only led to disaster. After they hung, completed and painted all of the sheet rock in the house, they switched on the water just to find that there were pipelines burst in the walls. Today, I CONSTANTLY make my professional check out the pipes initially, including the sewer lines.

While the plumbing is working, I'll have an A/C crew installing a new heating unit which consists of a brand-new gas furnace and central air. I have not always changed functional A/C systems and even today, if the current system is relatively new, I will avoid it. Mainly, though, I always set up completely brand-new systems.
